I was stood in the kitchen last weekend looking at the remains of my bags of strawberry, cherry and raspberry and had a little thought - I wonder what they'd be like in muffins?
That's all the encouragement I need to get my bake on!

I put my Urban Fruit berries into a bowl and covered them with some hot water; this helps soften and plump them out before you stir them into the final mix (just when you think they can't taste any better, they get better, amazing). You'll need to drain them before using, I give them a gentle squish in my hands to remove any major amounts of excess water.
Three Berry Muffins
(Makes 12 epic muffins!)
Ingredients
60g softened butter
100g sugar (I used vanilla sugar, regular will be fine, you might want to add a little vanilla extract to the mix)
2 large eggs
250 plain flour
2 tablespoons baking powder
Pinch of salt
Pinch of cinnamon
150g dried fruit (I used Urban Fruit's Strawberries, Raspberries and Cherries)
100ml milk (I used soya, use whatever you have in)
Method
In bowl one mix together the butter, sugar, eggs (and vanilla, if using)
In bowl two mix together the flour, baking powder, salt and cinnamon
Add bowl one to bowl two and combine the mixtures - don't overmix, you'll upset the baking powder.
Use the milk if the mixture feels too sticky, it should be loose but not runny.
Finally stir in the fruit and then distribute between 12 muffin cases.
Bake these at 180 degrees C (Gas Mark 4/ 350 degrees F) for 25-30 minutes until risen and golden.
